I had been craving for eggplant salad. Finally, when we went to the Asian store one day, they had the Japanese eggplant. I bought two medium size of eggplant. I search for the cooking direction and ingredients. I found it at Panlasang Pinoy website.
First step was to grill the eggplant. Second was to peel off/remove the eggplant skin. Third was to cut up the tomatoes, onions and ginger. Vinegar, salt and pepper to make the salad complete! Finish photo will be uploaded later:)
